Step
4: Remember safety comes first. If you are uncomfortable
using the stove, ask your friend or a family member to assist
you in cooking the pancakes. Place the large skillet on
the stove. Turn the burner low. Measure 2 tablespoons of
vegetable oil into the skillet. Use a potholder when touching
the handle of the skillet to avoid burns. Scoop one tablespoon
of batter into the skillet. Let the pancake cook for about
a minute. When you see bubbles rising on top of the pancake
turn it over with the spatula. It should be golden brown.
Let it cook for an additional minute then remove the pancake
from the skillet.
Repeat the process until all the pancakes are complete.
Turn the flame off and place skillet on back burner to let
cool before washing the pan.
Serve
warm with applesauce on the side and enjoy.
Mr. Bogitch reminded us that although potato pancakes are
served as part of a traditional Hanukkah meal, they can
be served as a side dish any time. So the next time you
want a change of pace from mashed potatoes, baked potatoes
or rice, get out your potato pancake recipe!
